If the carrot is the workhorse and cauliflower is the chameleon, corn is the undisputed titan of the fields. It’s one of the few plants that is simultaneously a vegetable, a grain, and a fruit (botanically speaking, each kernel is a caryopsis).

🌽 The Three Lives of Corn
Not all corn is created equal. Depending on when it’s harvested and how it’s processed, it serves very different roles:

Sweet Corn: This is what we eat off the cob. It’s harvested while the kernels are “milky” and full of sugar before they turn to starch.

Field Corn (Dent Corn): The “hard” corn used for livestock feed, corn syrup, fuel (ethanol), and those tortilla chips in your pantry.

Flint Corn: Also known as “Indian Corn,” this is the colorful, hard-shelled variety used for decoration or ground into high-quality cornmeal.
